When I make something by hand it's my responsibility to source the best ingredients and use those ingredients to create a superior product. The end result of using the best ingredients is a light, fresh dough that isn’t weighed down with superfluous crap injected to keep pasta ‘fresh’ for years. It’s what pasta should be…simple.
